Nose
The wine is rich in berry aromas, dominated by cherries, ripe blackberries and moderately rich aromas of black fruit and rose. Saperavi expresses varietal characteristics which is an unique feature of Georgian wine.
Palate
The palate is dominated by sweet cherry and raspberry tones with a long, lasting finish.
Growing Conditions
Akido Saperavi is made from 100% Saperavi grapes grown in the Kakheti region of Georgia. The vineyard is 35 hectares, sits 500mtrs above sea level, and is moderately humid and warm. The temperature averaged 35 ᴼC during July-August which facilitated the yield of quality grapes which was approximately 300,000 kg.
Harvest
Due to the moderately mild and warm summer and autumn months, the degree of ripeness of the grapes rises by early/mid September and harvesting time is scheduled around this.
Winemaking
The grapes were picked then processed in the cellar in the morning. The duration of maceration was extended during 5 days at a low temperature and followed under controlled fermentation conditions. After its completion, the liquid was left with the solid parts of the grapes again for 15 days, which enriched the wine with varietal characteristics. The winery has two winemakers: chief winemaker George Datukishvili and winemaker Theofane Sigua.
Aging
The wine was transferred to stainless steel tanks where secondary fermentation took place. Once complete, it was purified and underwent cold stabilisation prior to bottling.
Appearance
The wine has a natural cherry colour, with slight pomegranate tones in the tears running down the glass - a very impressive sight.

Roast beef, lamb rib roast, and cheese.
