Growing Conditions
350-750 m. We produce a very characteristic, dry red wine from Saperavi, a hand-harvested selection grown on humus-carbonate and humus soils in beautiful vineyards planted within the altitude.
Winemaking
We pick selected bunches of grapes at 20-22% sugar content and 6-8 titer acidity. After emptying and pressing the claret, fermentation takes place in stainless steel tanks at a temperature of 23-28°C. Fermentation is carried out with cultured yeast, using the methods of delousing and remounting. After 12-15 days of maceration, we transfer the wine to 300 l. For malic acid fermentation and aging. Further maturation is carried out in stainless steel cisterns. The last stage is maturation in bottles.
Aging
9-12 months aging in French oak barrels.
