Nose

Scents of hay, fresh almonds and mirabelle plum.

Palate

Low tannins, dry, with less than medium body and slightly higher acidity. A good balanced structure and a long aromatic finish.

Growing Conditions

All wines from the Bimbili range are made from grapes carefully selected from well aged (at least 25 year old) vines. The Tsolikouri grapes are harvested from some of the older vineyards located in the sunny mountain slope villages of Khimshi, Sadmeli and Khvanchkara, which sit 400-500m above sea level. The average annual precipitation is 1200 mm whilst the mean temperature during the growing season is 20.5 c. As all vineyards are owned by small-scale individual farmers, soils and grapes are treated with traditional methods, which include hand-operated mechanisation, organic manure and hand-picking of grapes.

Harvest

Tsolikouri grapes are exclusively hand-harvested as landscape and vineyard size do not allow other methods. Harvest was held during Oct. 25-30, only under dry conditions, during early morning hours.

Bottling

Standard bottling processes are employed. Bottles are produced by a leading French company. Cork stoppers are used as closure.

Winemaking

Grapes were processed the same day it was received in to the winery. A mixture of classical and traditional local production methods were applied.

Aging

Wine is kept and aged in 5t stainless steel containers for up to 6 months before bottling.

Appearance

Pale yellow, very transparent and clear.

Food Pairing

Best with smoked fish, aubergine salads and various nuts.
