Nose
Crazy aromas of juicy pears, dried banana and citrus.
Palate
Mouth is super complex, fresh and dry as a pet nat should be.
Growing Conditions
The grapes used to make this wine are hand harvested from, on average, 25 year old vineyards at an altitude of 500 masl. Vineyards are located in Ateni and Lamiskana (Kartli), Rupoti and Vartiskhe (Imereti). The soils are of limestone which imparts a minerality quality to the wines and the vineyards are managed using organic viticulture techniques.
Harvest
All grapes were harvested and sorted by hand.
Bottling
The wine is bottled unfined and unfiltered in September 2019. It is bottled before the end of fermentation with the aim of 4/5 bars of pressure.
Winemaking
This Petillant Naturel is made according to the ancestral method, which means that wine is bottled before the first alcoholic fermentation is complete. The wines were fermented on their indigenous yeasts without any interventions that could compromise the authenticity of the wine. The fermentation ends in bottle and the Co2 is kept inside, however, it has a traditional method approach. In order to recreate the secondary fermentation in bottle, some fresh juice from 2019 was added on top of wine coming from the Qvevri reserve wine. Chinuri 2019 made using carbonic maceration was added to restart ferment in the bottles. Therefore, this unique sparkling wine is made from wines that have been aged in Qvevri since 2017. Aging
Wines are fermented and aged on lees for a minimum of 8 months in Qvevri or old french oak barrels coming from Champagne Egly-Ouriet and Burgundian Domaine Prieuré Roch, Domaine Hubert Lamy, and Domaine de Villaine amonst others.
Appearance
Clear with fine bubbles.
