Nose

Notes of Georgian spices, apricot and dried apples.

Palate

It is a passionate energetic and wine with strong tannins, fruit notes and a pleasant memorable finish.

Growing Conditions

Grapes are grown in the village of Tibaani, located in Signagi, Kakheti. Here the soil is meadow brown with light clay and stone. The altitude is 360m asl and the vines were planted in the mid 1980s. The vineyard is in the process of becoming certified organic.

Harvest

The 2020 harvesting season kicked off with a nice autumn. September brought beautiful, mild weather, offering the fruit several extra weeks to hang during long, sun-filled autumn days. The harvest period started at 05:00 pm, to avoid strong sun in the middle of the day. Grapes were whole bunch picked by hand and transported by container.

Winemaking

This wine is made in a kvevri by the ancient Georgian traditional way, with wild yeast and free from any additives. The wine was fermented spontaneously and aged in kvevri (large buried earthenware vessels).

Aging

6 months skin contact then 8 months in Kvevri.

Appearance

Lustrous deep amber coloured wine, unfiltered so small amounts of sediment may appear.

Food Pairing

Pairing (Georgian): Khashlama (boiled beef), Chakafuli (sheep meat stewed with taragon, greens and cherry plums), Ekala (smilax), fried chicken, eggplant with walnuts, Tushetian sheep cheese. Pairing (International): North African and Asian cuisine rich in spices, hard cheeses, Coq au vin, vegetables fried in spices.
