Nose
Quite exuberant on the nose with some floral notes, candied apple, and some light herbal touches such as sage.
Palate
The palate is round and smooth with a smooth floral touch and a slightly spicy aftertaste. It would be an excellent partner for any sea fish, like a roasted seabass with an herb risotto and the Georgian lamb stew.
Growing Conditions
This wine comes from a geologically unique micro-terroir near the village of Vardisubani. In an ancient riverbed, at an altitude of 600 meters, lies an eastward-facing parcel with a soil of stones and pebbles over a limestone subsoil. The dominant grape variety, Rkatsiteli, naturally brings minerality to the blend. Kakhuri Mtsvane contributes sweetness and roundness, while Kisi strengthens the blend with its highly aromatic properties.
Harvest
GraSelective hand-picking in small 20 kg crates. Average 6-7 Tons per hectare.
Winemaking
Harvest hand-picked in 20 kg boxes from plots of our Vardisubani vineyards, 60% Rkatsiteli, 20% Mtsvane and 20% Kisi. are macerated for 10 hours with skin contact at 8-10 °C before pressing. Fermented at 14-16 °C for 3-4 weeks. After the fermentation decanted from rough lees and aged on the soft lees (“Batonage”) for up to six months.
Aging
Ageing in 225-400 (lit.) French oak barrels for 18-20 months. Final blend, fining, filtration before bottling.
Appearance
Light silver yellow with green tinges.
