Palate

This brut sparkling wine presents a light to average straw color, with pale green sparks. Its nose unveils aromas of white flowers, hawthorn, and gentle lemon. The mouth is fresh, long, and fruity. Exclusively made from the traditional Georgian varietal Rkatsiteli and Mtsvane Kakhuri and added hint of Chardonnay to give a battery finish.

Growing Conditions

This wine is produced from a sloped plot located on the right bank of the Alazani River and the Greater Caucasus foothills at an altitude of 800 meters, with subsoil composed of clay, gravel, and some schists over a six-meter-thick limestone subsoil.

Harvest

Hand-picking in small 20 kg boxes to ensure the highest quality of the grapes. Average 8-10 Tons per hectare.

Winemaking

Harvest hand-picked in 20 kg boxes from plots of our Vardisubani vineyards, after harvesting them grape varieties are fermented separately in stainless-steel tanks. At the end of fermentation decanting from gross lees, final blending, fining and filtration. Secondary fermentation, expedition liqueur addition to adjust sugar level at suitable condition. Final filtration before bottling.
