A brief history

Kapistoni Winery is a family-owned, traditional wines business located in a certified Eco-Zone in the Saguramo village of the Mtskheta region in Georgia. The winery produces fine natural wines in Qvevri (huge clay vessels buried in the ground for fermentation and storage of wine). This 8000 year-old winemaking tradition has been recognized by UNESCO as a world cultural heritage.

​Our winemaking is done with the utmost adherence to the traditional Qvevri Georgian method, using ancient, unique, indigenous grapes selected and harvested from the best varieties in ecologically cultivated vineyards from the regions of Kartli and Kakheti.

​This commitment to tradition and quality contributes to the transformation of the juice of our grapes into premium quality, aromatic, rich, complex and well-rounded wines.

VARIETY 100% Tavkveri TASTING NOTES Appearance Medium dark purple, medium opacity. Absence of sedimentation and particles. Bouquet Aromas of wild blackberries, wild blueberries and wild cherries. Subtle aromas of back pepper are present. Palate This well-balanced interplay between the wild blackberries and wild cherries is notable immediately, followed by mellow wild blueberries notes. Floral and fruit forward with a powerful and elegant tannin structure in a long-lasting finish. SERVING SUGGESTION Food Pairing Tavkveri’s powerful and elegant tannin structure is an excellent pairing for fatty meat dishes like beef, pork and duck. Grass fed beef pairs especially well, as well as grilled or barbecued meats. It also goes well with rich pastas and cheeses. Serving Temperature 18-20°C. Historically during the first week. Fermentation Skin contact alcoholic fermentation lasts 7-11 days. Secondary Fermentation Secondary fermentation process lasts for 15-17 days (Malolactic). Maturation Once the alcoholic fermentation is finished, skins are separated from the wine and it continues to mature in Qvevri for 6-8 additional months. GROWING AREA Location Grapes harvested in central Gori Region, Central Kartli Elevation 750 meters. Soil Profile Vertisol soils. It has an illuvial horizon. Clay texture, according to the total chemical analysis of soil and clay, is characterized by uniform distribution of main oxides. Predominants in clay minerals are smectite, hydro mica and chlorite.
