Nose
A wonderful harmony of dried black plums and cherry with matured Cornelian cherry and cranberry flavours.
Palate
Full flavoured and exuberant dominated by dried Cornelius cherries and forest berries. Pronounced varietal power shines through with excellently expressed vinosity ie. characteristic body, flavour and colour.
Growing Conditions
The grapes are grown in the villages of Vaziani and Dzalisa, part of the mountainous and historical region of Kartli located in central-to-eastern Georgia . Vines were planted in 2007 and are tended to manually.
Harvest
To ensure premium quality, grapes are hand picked when they reach their optimal ripeness then gently transported from the vineyards to Tevza Winery 30km away. Grapes are crushed directly into 900 to 1300L Qvevris where they wait for wild fermentation to begin. Naturally started fermentation stops when the wine is ‘dry’, which is followed with natural malolactic fermentation. After analysing and tasting the wine, each individual Qvevris is topped up from reserved lots of the same wines. Maceration and skin contact lasts between 8 to 14 days.
Bottling
Bottling is conducted under the highest standards with just over 1750 bottles produced.
Winemaking
Around the end of October, macerated wines are taken off their bottoms which contain yeast lees, skins and seeds. The wines are then transferred back to Qvevri for further clarification and style formation until the beginning of Spring.
Appearance
The colour is mature but still ripe with cherry hues.
Food Pairing
Fantastic with meat and game dishes such as wild duck but also great with some Asian food as well as vegetarian and vegan meals.
