Nose

Light forest fruit aromas.

Palate

Pleasant acidity, red plum and red sweet cherry.

Growing Conditions

The vineyard is located 160m above sea level on south-west slope in the village of Dimi, Baghdati district. The clay type soil and sub tropical humid climate gives full ripening to the harvest.

Harvest

The harvest was started in late November, with medium yield and the grapes were transported straight to the cellar with boxes for immediate process.

Bottling

The wine is bottled unfiltered and each bottle has an unique number filled in and signed by hand.

Winemaking

The wine was made with the Georgian traditional method in "Qvevri's" with 50% of skins and without stems. The fermentation period took around 3 weeks and afterwards only the juice was taken into other "Qvevri" for a further 4 months.

Aging

The wine ageing after Qvevri continued in stainless steel tanks before bottling.

Appearance

The wine is medium cherry red with high clarity but, as the wine is unfiltered, some sediment may appear after time.

Food Pairing

Best paired with light cheese and fruits, perfect chilled as an appetiser, or just have it with pizza or pasta. Best served 12-15C
