Growing Conditions

Kakheti is one of the ancient and unique regions of viticulture and winemaking in Georgia. The vineyards are located in the valleys of the Alazani and Iori rivers at an altitude of 400-700m above sea level. The Kakhetian climate is warm . The number of hours of sunshine per year varies from 2000 to 2200. Soil type is humus-carbonate, black and alluvial.

Harvest

The winery of the Bolero & Co. is located in the heart of Kakheti, in the city of Gurjaani, which is famous for its ancient winemaking traditions. Gurjaani is sitauted in the Alazani Valley and is surrounded by significant and protected regions such as Kindzmarauli, Akhasheni, Mukuzani, Tsinandali, Manavi. Thus, grape delivery and further processing takes place in the shortest possible time, making it possible to preserve the gustatory taste of the grapes and create the highest quality wines.

Winemaking

The winemaking process involves pressing the grapes and then pouring the juice, grape skins, stalks and pips into the Qvevri, which is sealed and buried in the ground so that the wine can ferment for five to six months before Qvevri’s opening. The ancient Qvevri wine cellar contains more than 220 Qvevri with average volume of 3000 litres and age from 90 to 110 years.

Appearance

The wine has dark garnet colour.

Food Pairing

With cheese, baked ham, lamb and pasta with tomato sauce. The recommended temperature of consumption is 16-18 C.
