Nose
Spicy and fruity with lots of fruits including cherries and wild strawberries.
Palate
A textural and fresh wine. The nose of cherries and strawberries follows onto the palate where it marries with hints of liquorice. A nice long finish supported by smooth tannins.
Growing Conditions
The grapes used to make this wine are hand harvested from vineyards located in the village of Khashmi, Sagarejo municipalityn in the Kakheti region of Georgia. Planted in the early1990s, the vines sit at an altitude of 700 masl in limestone soil. The vineyards are managed using organic viticulture techniques.
Harvest
All grapes were harvested and sorted by hand in early October, relatively late to allow a full maturity.
Bottling
The wine was bottled unfined and unfiltered with a minimal amount of So2.
Winemaking
Whole bunches were meticulous sorted at the winery before being put directly into Qvevris, with an addition of pressed juice. Fermentation and maceration took place over 20 days with indigenous yeasts. The wine was racked to old French oak barrels and Qvevri to achieve malolactic fermentation and aged slowly for another 6 months.
Aging
70% aged in old barrels, 30% in qvevri.
Appearance
The colour is light red with a violet hue.
