Nose

The nose features ripe peach tones blend nicely with oak and walnut tones.

Palate

The taste of the wine is harmonious, complete and complex, with a pleasant high mineralization. The wine has a long aftertaste.

Growing Conditions

The wine Mtsvivani Kakhuri is made by the grapes from the best and old vineyards of specific viniculture microzone of Kvareli. The vineyards are especially rich with black slates, which determine the uniqueness of the wine. The wooded mountains and the hot cliffs of Kvareli, which surround the mentioned vineyards, create a special and unique microclimate, and all this is a pre-condition for obtaining the highest quality of wine. It should be noted that the last saplings of the Mtsvivani Kakhuri grape variety were preserved by JSC Corporation Kindzmarauli and then it was revived from our vineyards. Therefore, for Mtsvivani Kakhuri, our vineyards are the "parent place".

Harvest

Selective hand picking (only healthy bunches), during the physiological ripening of the grapes, from the end of September to the beginning of October.

Bottling

The wine is cold stabilized, filtered then bottled by gravitational bottling method and the closure is natural cork.

Winemaking

Crushing of whole grapes is produced as gently as possible, after which the self-flowing fraction of sweet is separated (from the mentioned fraction Mtsvivani wine is obtained). After processing and cleaning the sweet fraction, is the process of alcoholic fermentation, which is under controlled temperature of 16-18°.

Aging

The wine is aged in oak barrels at least 8 months and then aged in 225-liter barrels for 6-12 months.

Appearance

The wine is the color of an egg yolk with a golden glow.

Food Pairing

Served at 14-16°C, pears well with dishes of rabbit and bird.
